Gluten Free Chocolate Chip Cookies
If you do not tolerate gluten or are trying to cut down on gluten in your diet, these are a great treat to have on the go!
Gluten Free/Protein Chocolate Chip Cookies
- Oven 350º (190C) Approx. 24 large cookies
- 125ml softened unsalted butter
- 2 organic eggs (or 2 flax gel eggs) <2 tbps ground flax + 4 tbps boiling water>
- 10ml vanilla 125ml brown sugar or 100ml fructose or maple sugar
- 250ml brown rice flour
- 125ml low fat soy flour
- 5ml baking soda
- 250ml of the best dark chocolate you can find (chopped)
- 125ml dried cranberries 125 chopped nuts (*optional) *100ml organic desiccated coconut, chopped, dried apricots
Cream the butter, add eggs and vanilla and beat until creamy. Add sugar and mix. Toss in flours, the b. soda and stir until mixed. Add chocolate, berries, nuts and any other goodies. Put into refrigerator at least one hour to bind the ingredients. Drop from a tablespoon onto a baking sheet (I use parchment paper rather than greasing the sheet), flattening slightly. Bake 12-15 minutes. Cool, then store in an airtight tin. Enjoy!
